Title: All Grain Porter
Ingredients: 1 Servings
8 Lb American 6-row (Klages)
Malt
1 Lb Munich malt
1/2 Lb Crystal malt (90L)
1/2 Lb Black patent malt
1/2 Lb Chocolate malt
1/2 Lb Roasted barley
1 Tsp Calcium carbonate
1 Oz Northern Brewer hops (boil)
1/2 Oz Cascade hops (boil)
1/2 Oz Cascade hops (finish)
Whitbread ale yeast
Method of Preparation: Use Papazians temperature-controlled mash procedure. Sparge and boil. This recipes is based on Papazians "Silver Dollar Porter." I suspect the difference in quality between this batch and an extract batch is going to be the difference between fresh-brewed coffee and instant. The wort had a much better hot and cold break than Ive ever experienced using extracts, and it tasted better too.
