Title: $250 Serving Spinach Radiatore
Ingredients: 4 Servings
4 Cup Radiatore pasta [3/4lb]
3 Tbl Olive oil
1 Onion, chopped
2 Garlic cloves, minced
1 Tbl thyme, Dried
1 Tbl oregano, Dried
10 Oz Fresh spinach, chopped
1/4 Cup Stock - vegetable (or chicken)
1 Tbl Lemon juice
1/2 Tbl Salt
1/2 Tbl Pepper
1/2 Cup Light cottage cheese
Method of Preparation: In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot. Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened. Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted.
