Title: *Carote In Dolce-Forte: Sweet & Sour Carrots
Ingredients: 6 Servings
-Sherilyn Schamber
1 1/2 Lb Med size carrots
Coarse grained salt
8 Tbl Sweet butter
1 Tbl All purp, unbleached flour
1 Tbl Sugar
3 Tbl Red wine vinegar
Salt and pepper
Method of Preparation: Soak carrots, whole in bowl of cold water 30 mins. Bring a lg pot of cold water to boil, add salt, then carrots and cook 15 mins. until they are cooked but still firm. Cool under cold running water, then remove their skins by gently pushing them off. Cut carrots vertically into fourths, then cut each fourth into 2" pieces. Place butter in med sized skillet over med heat. When melted, add flour. Mix well. Add sugar and when completely incorporated, add vinegar, stir. Put in carrots.Gently shake skillet until carrots become coated with sauce. Taste for salt and pepper. Source: The Fine Art of Italian Cooking. Delicious! Very rich and buttery but delicate. Look to cut the sauce a bit next time. |
