Title: Acapulco Rice
Ingredients: 4 Servings
16 Oz Tomato Sauce
1 1/2 Cup Minute Rice
1/2 Cup Water
1/2 Cup Crushed Tortilla Chips
3 Tsp Chili Powder
1/2 Cup Shredded Cheddar Cheese
Method of Preparation: Combine tomato sauce, water and chili powder in a medium sized saucepan. Bring to a full boil. Stir in rice. Cover, remove from heat and let stand for 10 minutes. Sprinkle with tortilla chips and cheese. Serve with shredded lettuce and sour cream if desired. From: Syds Cookbook. - ---- |
