Title: Bubbas Best Fajitas - Modified
Ingredients: 1 Servings
- BILL LAWRIE RGGWA
3 Lb Bag boneless, Frozen
Skinless breast tenders
in the refrigerator, Thawed
Marinade:
1/2 Cup Pace picante salsa (Bubbas
Favorite)
1/2 Cup Canola oil
Juice of
1 Likme
3 Cloves garlic, chopped
2 Tsp Cumin
1/2 Cup Worcestershire sauce
1/2 Cup Soy sauce
2 Tsp Liquid smoke (Bubba says
Its really best to omit
Liquid smoke & use mesquite
Or hickory chips on your
Charcoal fire
2 Medium Yellow onions, sliced into
Rings
1 Tsp Pepper
Method of Preparation: Bubba and Billy Joe, those self-appointed gurus of Texas cuisine have done it again--made a good thing even better. They took the previous version of their popular fajita recipe and made it just as tasty, but more convenient. Start with a 3 pound bag of frozen boneless, skinless breast tenders you get at places like Sams. These are handy, cause they come in their own ziplock bag. After thawing them in the fridge, carefully open the bag and drain any accumulated water. Then mix the marinade and pour into the bag. After pouring this into the bag, squeze the air out and zip it shut. Set the bag in some sort of bowl to catch the drips if it leaks, then into the fridge. Marinate for 4-24 hours, turning the bag several times. Drain chicken. Pour the marinade and onions in a foil pan to grill along with the chicken. Grill the chicken until done, turning several times to avoid burning, and basting occasionally with marinade from the onion dish. Cook until cooked through, basting frequently. Remove from grill. You dont have to slice these strips--theyre perfectly sized to serve as is off the grill. Serve along with: Shredded cheddar, sour cream, the onions from the cooked marinade, refried beans, Mexican rice, guacamole and picante sauce or salsa. Heres a hint from Billy Joe: He says to take the leftovers and divided them up into individual portion sizes, lay them on a sheet of foil, sprinkle on some of the marinade, then wrap up very tightly. Put them in an individual ziplock bags and freeze. Then, whenever youre in the mood for fajitas, all you have to do is remove them from the freezer and place the foil wrapped pouch iin a 250F oven --NOT A MICROWAVE!-- for about an hour, until theyre heated through.
