Title: (Not Just Another) Pasta Salad
Ingredients:
12 Servings
4 Qt Spiral (or shell pasta)
-cooked
1 Lb Roma, or medium tomatoes,
-seeded, 1/2" dice
1/2 Cup Red onion, small dice
1 1/2 Cup Pitted olives, Kalamata or
-canned, halved
1/4 Cup Un tomates, Dried
-reconstituted, chopped
1 Cup Cauliflower, small pieces
1/2 Cup Broccoli, small pieces
1/2 Cup Roasted red peppers, 1/2"
-dice
1/2 Cup Capers
1 1/2 Cup Feta cheese, crumbled
1/4 Cup Fresh parmesan cheese, Grated
---- MAGIC SALAD DRESSING ----
4 Cloves garlic, minced
3/4 Cup Extra virgin olive oil
1/4 Cup Red wine vinegar
1 1/2 Tbl Capers
1 Tbl Liquid from capers
1/4 Cup Lemon juice
1/4 Tsp pepper, Fresh Ground
1 Tsp Salt
Method of Preparation:
submitted by: (Cathlin Bennett, Corvallis, Oregon) Combine all salad ingredients except parmesan cheese. In a blender mix all dressing ingredients.
