Title: Baked Stuffed Yams With Chipped Beef
Ingredients: 4 Servings
1/2 Cup Dried beef, chopped
1/4 Cup Hot milk
4 Louisiana yams, baked
2 Tbl Onion, finely chopped
3 Tbl Butter (or margarine)
1/2 Cup Cheddar cheese, grated
Method of Preparation: Combine dried beef and milk in mixing bowl. Cut yams in half lengthwise and scoop out centers. Combine yams, beef-milk mixture, onion, and butter. Beat until light and fluffy. Fill yam shells with mixture. Sprinkle cheese on top. Bake in moderate oven (350 degrees) 20 minutes.
