Title: Baked Stuffed Yams With Sausages
Ingredients: 6 Servings
6 Louisiana yams, baked
1/4 Cup Sugar
1 Lemon, juice and grated rind
1 Tsp Cinnamon
12 Pork sausages, cooked
Method of Preparation: Scoop yam pulp into mixing bowl and blend with next three ingredients. If desired, substitute juice of small orange or 1/2 cup pineapple juice. Whip fluffy; refill yam shells. top with little pork sausages and return a few minutes to a hot oven (450 degrees) just before serving.
