Title:  15 Bean Soup

Ingredients: 
1 Servings
-------------------
1 bag Hurst's Ham Beans 15 Bean Soup
2 quarts water
ham, ham hocks or a ring
, of smoked sausage,
, chopped
1 large onion, chopped
1 18 oz can tomatoes
1 red pepper (or 1 tsp chili powder)
lemon juice from 1 lemon
1 Clove minced garlic, (optional)
enclosed ham packet
salt and pepper, To Taste


Method of Preparation: 
Place beans in a pan, cover with water and soak overnight. In the morning, rinse and drain. Add 2 quarts of water to beans. Add ham, ham hocks or smoked sausage. Bring to a boil and then simmer slowly, uncovered, for 2 1/2 to 3 hours. Add the onion, tomatoes, red pepper (or chili powder), lemon juice, garlic and salt and pepper. Simmer for 30 minutes. Add the contents of the ham packet one or two minutes before cooking is completed. Serve with crackers and a green salad. Converted by MC_Buster.
